Cola Chicken

Cola Chicken

1 cup soy sauce
1 cup vegetable oil, I have cut this down to 1/3-1/2 cup
1 can soda (coke, cherry coke, dr. pepper, pepsi)

Marinate 4-24 hours then grill.

Tortilla/Taco Soup from cans


Tortilla/Taco Soup

2 Cans Cream of potato soup, I prefer Cr. Of Chicken
1 Can kidney beans (drained)
1 Can black beans (drained)
1 Can great white beans (drained)
2 Small cans diced green chilies
1 Can chopped tomatoes
1 Pkg. taco seasoning
Shredded chicken or beef
1 Can of water

I also like to add a can of corn


Combine all ingredients in crock-pot on low heat for 6-8 hours.
If you pre-cook chicken or beef cook in crock pot on low for 4 hours. 
Frozen chicken tenderloins can be added with other ingredients, then shred just before serving.
Top with shredded cheese and eat with tortilla chips.  My family also tops with sour cream.

Red Lobster Cheddar Bay Biscuits

Red Lobster Cheddar Bay Biscuits

2 C. Bisquick
2/3 C. milk
1/2 C. shredded cheddar cheese
1/2 tsp. garlic powder
1 tsp. parsley

1/2 C. butter or margarine, melted
1/4 tsp. garlic powder

Mix bisquick, milk, cheese, garlic and parsley until a soft-dough forms.  Drop by spoonfuls onto an ungreased cooking sheet. Bake 8-10 minutes, until golden brown @ 450.  Mix butter & garlic powder, brush mixture over cooked biscuit.

Chewy Caramel Popcorn

Chewy Caramel Popcorn

1 can sweet condensed milk
1 lb. brown sugar
1 C Karo Syrup
1 stick of butter
2-3 bags popped popcorn

Heat brown sugar, corn syrup & slowly add milk to soft ball stage.  Add stick of butter and remove from heat. Pour of popcorn.  Remove uncooked popcorn kernels before adding caramel.

Pumpkin Spice Cookies

2 spice cake mixes
1 large can pumpkin
1 1/2 bags choc. chips

Mix together and bake @ cake temperature on box for about 20 minutes, same as cupcakes.

Shortbread Cookies

Shortbread Cookies (My favorite Christmas cookie)

1 lb. butter
1 1/2 C. powdered sugar + more for rolling cookies once cooled
4 C. Flour

1/2 C. chocolate chips or mint choc. chips

1/2 tsp. vanilla
3/4 C. walnut

1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice

Combine first three ingredients, then add chips or spices or nuts&vanilla.  Roll into 1-inch balls, place on baking sheet. Bake 20 minutes at 350. Let cool completely and roll in powdered sugar.

Guacamole

Guacamole (Auntie Marla's)

2-3 medium avocados
1 tbsp. finely chopped cilantro
1/4 lime juice
1 garlic clove
1/4 tsp salt
1/2 tsp onion powder

Combine together and let stand a few minutes.

Bean with Bacon Soup

Bean with Bacon Soup

1/2 lb. bacon, cooked and cut-up or crumbled
1/2 onion, chopped
3 medium carrots, diced
2 celery stalks, diced
3 (14.5 oz.) cans Great Northern Beans
2 (14.5 oz.) cans Chicken Broth
3/4 tsp dry sage
1/2 tsp salt
pinch of ground black pepper
2 cups water, more if too much boils off.
1 tbsp. reserved bacon grease

Combine all ingredients, bring to boil. Let cook 10-20 minutes until carrots are tender, then let simmer until ready to eat.

French Dip Sandwiches

2.5 - 3 lb beef roast (it can be frozen)
2 tbsp. olive oil
S & P
2 - 1oz. pkg dry onion soup mix
2 cups water
2 cans beef broth
6-8 large buns (french bread style)
white cheese, sliced (mozzarella, provolone or swiss)

Heat oil in skillet, rub roast with S&P.  When oil is hot, place roast in pan and sear on all sides.  Place in crock-pot and sprinkle with soup mix.  Pour water and beef broth over roast.  Cook 8-10 hours on high, 4-5 hours on low.  Shred with fork.  Place shredded meat on bun, put slice of cheese over meat.  Broil in oven until cheese is melty/golden.  Dip sandwich in remaining juices.

BBQ Pulled Pork Sandwiches

1 - 6lb. pork roast
1 can coke
64 oz. Sweet Baby Ray's bbq sauce
S&P

Buns

Place roast in crock pot slow cooker, pour coke over the top, season with S&P.  Cook on low for 6 hours or high for 4 hours.  One hour before done, shred pork, return to crockpot, Add BBQ sauce and continue to cook one more hour.  I have had trouble finding that brand of BBQ sauce and have used whatever I have on hand.  I have also shredded and looked on low longer than 6 hours.  Serve on hoagie style or hamburger buns.  This is a huge batch!  I cut in half and serves my family almost twice, depending on what they eat the first night. 

Sloppy Joes

2 lbs. ground beef
2-3 garlic cloves, crushed
1/2 - 1 tsp. garlic & onion powder
1 tsp. chili powder
2 tsp. Worcestershire sauce
2 - 15oz. cans crushed tomatoes, pureed in blender (we don't like chunks!)
1/2 cup ketchup
2 tbsp. mustard
1/4 cup white sugar
8-12 hamburger buns

Brown ground beef w/ garlic, seasonings, Worcestershire sauce.  Drain.  Add tomatoes, ketchup, mustard & sugar. Bring to boil then cover and simmer 15-20 minutes over low heat, stirring often.  Serve on buns.
