My mom is having Easter dinner at her house and I was asked to bring potatoes. The only kind we eat with ham is yummy potatoes. aka Funeral potatoes.
Yummy Potatoes
1 pint sour cream
1/2 cup margarine, melted
2 lb. bag frozen potatoes
2 cans COM soup
1 1/2 Cup grated cheese
1 cup cornflakes
Combine all ingredients except cornflakes. Place in 9x13 pan. Crumble cornflakes and sprinkle on top. Bake @ 350 for 45 minutes.

Nacho Meat Loaf

Nacho Meat Loaf
(The origianl recipe came from Dinner is Ready 30meals in one day, I added and omitted, mine is below.)
3/4 Cup crushed nacho tortilla chips
1 egg
1 tsp minced garlic
1 4oz can diced green chiles
1 1/2 tsp chili powder
1 1.25 oz. packet taco seasoning
1/2 - 3/4 tsp cumin
2 lbs ground beef
1/2 cup shredded cheese
Combine tortilla chips, egg, garlic, green chiles, chili powder and cumin. Mix well. Add ground beef and mix until combined. Put in freezer bag if you want to freeze for later. Label and freeze.
If cooking now preheat oven to 375, place meat loaf in greased loaf pan and bake for 1 hour. Remove from oven, sprinkle with cheese, return to oven until cheese is melted.
If frozen: Thaw. Place in greased baking pan. Bake at 375 for 1 hour. Remove from oven and top with cheese, return to oven until cheese is melted.
We eat meatloaf with baked potatoes. I really don't like meatloaf but it is a favorite for my husband and my children eat it without much complaining. It's almost win-win. I don't complain to myself so it's almost perfect. This recipe makes it alost delicious for me. When you have always hated something, trying to tweak it to make it good is hard, but I have come really close with this one :)

Keeping track
For a long time I have thought I need to keep track of what we eat,( mostly for easy access to my recipes.) I am always making changes to my recipes and I write in all my cookbooks in an attempt to keep track of what I've done. It'd be nice if everything was in one spot. This will be my attempt at that!
